How it's made
The French taco is where we let ourselves invent. This one started as a Tuesday-afternoon kitchen trial and stayed on the menu because the team insisted: the hot honey is cooked down with chilli and rosemary, the goat's cheese melts without splitting, and the red-wine pickled onion cuts the sweetness at exactly the right moment. You will not find it anywhere else, because the formula is ours.
